Multi Millet Khichdi
A hearty, one-pot meal packed with protein, fiber, and the power of multiple millets, perfect for lunch, dinner, or detox days.

Ingredients:
- 1 cup Mimi Crunch Multi-Millet Khichdi Mix
- ½ cup yellow moong dal (split yellow lentils)
- 2½–3 cups water
- 1 tbsp ghee or cold-pressed oil
- 1 tsp cumin seeds
- 1 bay leaf
- 1 small cinnamon stick (optional)
- 1 chopped green chili (optional)
- 1 tsp grated ginger
- ½ tsp turmeric powder
- ½ tsp red chili powder (optional)
- Salt to taste
- ½ cup chopped veggies (carrots, peas, beans, bottle gourd)
- Fresh coriander leaves for garnish
Method:
Step 1 – Rinse & Soak
Wash 1 cup Mimi Crunch Multi-Millet Khichdi Mix and ½ cup moong dal. Soak them together for 15–20 minutes.
Step 2 – Tempering
In a pressure cooker or heavy-bottomed pot, heat ghee or oil. Add cumin seeds, bay leaf, cinnamon, green chili, and grated ginger. Sauté for 30 seconds until fragrant.
Step 3 – Add Spices & Veggies
Add turmeric, red chili powder, and chopped vegetables. Mix well and sauté for 2 minutes.
Step 4 – Add Millet Mix & Water
Drain the soaked millet and dal. Add them to the pan along with 2½ to 3 cups water (depending on desired consistency). Add salt to taste.
Step 5 – Cook
If using a pressure cooker: Close lid and cook for 2 whistles on medium flame.
If using a pot: Cover and simmer for 20–25 minutes until millets and dal are soft.
Step 6 – Serve
Garnish with fresh coriander. Serve hot with ghee, papad, or pickle.
Pro Tip:
For extra richness, add a spoonful of ghee on top before serving. You can also stir in some coconut milk or crushed garlic for flavor variation.
