Foxtail Millet Pancakes

Traditional pancakes are often loaded with refined flour and sugar. But this recipe gives your morning a millet makeover. Made with Mimi Crunch Foxtail Millet Flour, these pancakes are naturally gluten-free, fiber-rich, and perfect for kids, working professionals, and anyone eating clean.

Ingredients:

  • 1 cup Mimi Crunch Foxtail Millet Flour
  • 2 tbsp rice flour or oat flour (optional, for extra softness)
  • 1 ripe banana (mashed)
  • ¾ cup milk (dairy or plant-based)
  • 1 tsp baking powder
  • 1 tbsp jaggery powder or honey
  • ½ tsp cinnamon (optional)
  • A pinch of salt
  • Ghee, butter, or oil for cooking

Toppings (optional):
Fresh fruits, nut butter, seeds, maple syrup, or dark chocolate chips

Method:

Step 1 – Make the Batter
In a bowl, mix Mimi Crunch Foxtail Millet Flour, rice/oat flour (if using), baking powder, cinnamon, and salt. In another bowl, mash the banana and mix in milk and jaggery. Combine wet and dry ingredients to form a smooth batter. Let it rest for 5–10 minutes.

Step 2 – Heat the Pan
Heat a non-stick pan or iron tawa on low to medium heat. Add a few drops of ghee or oil.

Step 3 – Pour & Cook
Pour a ladle of batter onto the pan. Do not spread too thin. Let it cook for 1–2 minutes until bubbles form on top. Flip and cook the other side until golden brown.

Step 4 – Serve
Stack 2–3 pancakes on a plate and add your favorite toppings. Serve warm.

Pro Tip:

To make it egg-free and fluffier, add 1 tsp apple cider vinegar to the milk. Want a savory version? Skip the jaggery and banana, and add veggies + spices to the batter.
