Ingredients
- 1 cup Mimi Crunch Barnyard Millet
- 2 cups water
- 1 cucumber, diced
- 1 tomato, deseeded and diced
- ½ red or yellow bell pepper, chopped
- ¼ cup boiled chickpeas or moong sprouts
- 2 tablespoons chopped coriander or parsley
- 1 tablespoon lemon juice
- 1 tablespoon olive oil or cold-pressed sesame oil
- Salt and black pepper to taste
- Optional: ½ teaspoon roasted cumin powder or chaat masala
Method
Step 1 – Rinse and Cook the Millet
Wash the millet thoroughly and soak for 15 minutes. In a pan, boil 2 cups of water and add the soaked millet. Cook on low heat for 10–12 minutes until the grains are soft and water is absorbed. Let it cool completely.
Step 2 – Prepare the Veggies
While the millet cools, finely chop all vegetables and herbs. Boil chickpeas or sprouts if using.
Step 3 – Mix the Salad
In a large mixing bowl, add cooked and cooled millet, chopped vegetables, chickpeas or sprouts, coriander, salt, pepper, and optional spices.
Step 4 – Dress and Serve
Drizzle olive oil and lemon juice. Toss everything gently to combine. Chill in the fridge for 15–20 minutes before serving for best taste.
